Veggie Calzones

3 c. broccoli florets
l large red pepper, thinly sliced
2 cloves garlic, minced
1 Tbs. olive oil.

Combine the above ingredients in a large bowl and microwave for 3 minutes.

In a meduim bowl combine:

1 1/4 c. shredded mozzarella cheese
2/3 c. part-skim ricotta cheese
3 Tbs. grated parmesan cheese

Divide 1 lb. of fresh pizza dough into 6 pieces. Spread each piece into a 6 inch square. Divide the cheese mixture among the dough squares, and then top the cheese mixture with veggie mixture. Fold the corners of the dough squares into the center and press to seal. Spray with olive oil cooking spray. Place on a baking sheet, and bake at 425 F for 20 to 30 minutes, or until golden.

I got this recipe from a magazine, and I really like it. It's a good way to get those veggies in, ya know. Eating them with some pasta sauce makes them even better. You can use store bought pizza dough or homemade. Here is a recipe for whole wheat pizza dough that I like to use.

Whole Wheat and Honey Pizza Dough

1 (.25 oz) pkg. active dry yeast
1 c. warm water
2 c. whole wheat flour
1/4 c. wheat germ
1 tsp. salt
1 Tbs. honey

In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 min. In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture. Stir well to combine. Cover and set in a warm place to rise for a few minutes. Then it's ready to use.

Also, I'm all about healthy convenience foods, so I like to make things that I can make and then freeze, and then just take however many I want out of the freezer and heat in the microwave really quick. I haven't tried it with these yet, but I think it would work well.

Yum Shay! This looks good. Have you tried these cold? I wonder if you could pack them in a lunch.

Yummy! Those sound so good...can't wait to try the honey wheat pizza dough, I've been trying to find a good wheat pizza dough recipe for a long time.

Ginger, I have eaten them cold, leftover and I think they are still good.

We made these last night and it seemed I had way more filling (or not enough dough). Did I do something wrong? Also, I had a lot more luck putting the filling in half of the dough and folding the other side over to make a triangle. They definitely were yummy though and tasted healthy.
