Grilled Salmon with avocado salsa

Original recipe found here.

If you don't like avocados, the rub is delicious on the fish even without the salsa. Last time I made it I tripled the rub and put it in a small tupperware up with my spices, so next time I'll just pull that out. Sorry for all the foot notes, the salsa is a very flexible recipe. It's really kind of like guacamole, but with diced rather than smashed avocados.

Ingredients (for 4 people):

2 lbs salmon, cut into 4 pieces

1 tbs olive oil

1 tsp salt (I found this to be a little salty, and use 1/2 tsp)

1 tsp ground coriander

1 tsp ground cumin

1 tsp paprika powder

1 tsp onion powder

1 tsp black pepper

Avocado salsa

1 avocado, peeled, seeded and sliced (I love avocados, so I use 2)

1 small red onion, sliced (red onions are huge! Adjust to taste)

3 mild hot peppers, seeded and deveined, diced or sliced (adjust to taste. I would consider an Anaheim a mild pepper. I've used way less hot peppers, or even left them out since my kids hate spicy food.)

Juice from 2 limes (I've used only 1 before and thought it was plenty limey)

3 tbs olive oil

2 tbs finely chopped cilantro

Salt to taste

Preparation:
  1. Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, and refrigerate for at least 30 minutes.
  2. Pre-heat the grill. (If it's not grilling season, you can bake the salmon)
  3. Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil and salt in a bowl and mix well, chill until ready to use.
  4. Grill the salmon to desired doneness.
  5. Serve the salmon topped with the avocado salsa. Rice makes a good side.

Avocado, Tomato & Feta Cheese Appetizer

I got this recipe from a mailer I got from Kroger (our grocery store). I tried it out on my family and my brothers' families and it was a big hit! *note: it makes a lot.

2 avocados, chopped
4 roma tomatoes, chopped
1 small red onion, chopped
1 bunch cilantro, trimmed and chopped
4 oz. feta cheese, crumbled (I couldn't find plain feta so I used peppercorn feta and it was awesome!)
1/4 cup olive oil
1 Tbsp. red wine vinegar
1 Tbsp. ground cumin
1 tsp. kosher salt

Combine the avocados, tomatoes and onion in a bowl. Mix gently. Stir in the cilantro. Add feta cheese, olive oil, vinegar, cumin and salt and mix until combined. Chill, covered, in the refrigerator. Serve with warm pita wedges, tortilla chips, or crostini. Refrigerate any leftovers.

(I served my with homemade pita chips and crostini but it's good with chips too)

Avocado Obsession

Lately, I've been on a huge avocado kick...probably because they've been on sale and every time I'm at the grocery store I have to pick a couple up! Anyway, about a week ago I was at Which 'Wich (a sandwich place) and tried their avocado and tomato sandwich. It was SOOOOOOO yummy! Of course I thought to myself, "This would be so easy to make!" (And a lot cheaper than $4.50 per sandwich.) So here's the first part of my avocado post:

Avocado and Tomato Sandwiches

1 Roll (Sandwich-worthy of course) I like wheat kaiser rolls
1/2 an avocado - either sliced or mashed and mixed with a little salsa
1/2 a tomato, sliced
Salt
Pepper

Additional Optional Toppings:
Lettuce
Cheese
Red Onion
Pickles
Mayo
Mustard
Balsamic Vinaigrette

Salt & pepper avocado and tomato to taste, sandwich it all together, and enjoy!

Now onto my new latest find! My friend, who's a great cook, recently posted a recipe for Black Bean Salsa that has avocado in it and it was GREAT! The only extra thing I added to it was 1/2 a seeded jalepeno. I made it for lunch today and ate it on a tortilla, mmmmmm.

Finally, my husband claims that I make the best guacamole...he's probably just a little biased, but I thought I'd post it anyway. (All these ingredients are totally to taste!!!)

Laura's Holy Guacamole!

2 Avocadoes, mashed
A couple spoonfulls of salsa (Clint's is our favorite if you've ever heard of it)...or you can chop up a couple of fresh tomatoes
About 1 1/2-2 teaspoons of fresh lime juice (or lemon is good too)
A large handful of chopped cilantro
1 garlic clove, minced or pressed through a garlic press
1/4 of a red onion, chopped
Garlic salt to taste
1-2 drops Chipotle or Green Tabasco Sauce

Mix all together and top with a dollop of sour cream.
