Roasted Tomatillo Salsa

I haven't tried this yet. I am attempting to grow tomatillos this year and found this recipe and want to try it later. It looks yum!

First thing you do is preheat your oven to broil. Gather these ingredients:

8 to 10 tomatillos, husks peeled and cut in half
3 jalapenos, seeded, cored and cut in half
3 cloves garlic
1 TBS olive oil

Lay the tomatillos (cut side down), jalapenos and garlic on a baking sheet and drizzle with olive oil. Broil in oven for 8 to 12 minutes or until tomatillos start to char. Remove garlic and jalapenos earlier if they get too dark.

Let cool and put all the vegetables in a food processor. Add:

a handful of cilantro
1 TBS sugar
1 tsp ground cumin
salt and pepper to taste

Process ingredients until smooth. Chill if desired. It is good warm or cold.

Eat with chips or use as a topping on any meat.

Red or Green Enchilada Sauce.

Make a big batch and freeze!

Red Sauce
3 med tomatos
4 8oz cans tomoto sauce plus 3 cans water
1 small onion
1 serrano chile pepper
2 chicken bouillon cubes
1 small handful fresh cilantro
lemon pepper and salt to taste

Blend all in blender or food processor, and season with lemon pepper and salt. Pour over your favorite enchilada recipe and enjoy!

Green Sauce
1 small red tomato
5-7 large tomatillos, roasted
1 small yellow onion
1 serrano chile pepper
2 chicken bouillon cubes
2 C water
1 small handfull cilantro
lemon pepper and salt to taste

Blend all in blender or food processor, and season with lemon pepper and salt. Pour over your favorite enchilada recipe and enjoy!
