I got this recipe from a mailer I got from Kroger (our grocery store). I tried it out on my family and my brothers' families and it was a big hit! *note: it makes a lot.
2 avocados, chopped
4 roma tomatoes, chopped
1 small red onion, chopped
1 bunch cilantro, trimmed and chopped
4 oz. feta cheese, crumbled (I couldn't find plain feta so I used peppercorn feta and it was awesome!)
1/4 cup olive oil
1 Tbsp. red wine vinegar
1 Tbsp. ground cumin
1 tsp. kosher salt
Combine the avocados, tomatoes and onion in a bowl. Mix gently. Stir in the cilantro. Add feta cheese, olive oil, vinegar, cumin and salt and mix until combined. Chill, covered, in the refrigerator. Serve with warm pita wedges, tortilla chips, or crostini. Refrigerate any leftovers.
(I served my with homemade pita chips and crostini but it's good with chips too)

Yummy Easy Fruit Dip
I found this on allrecipes.com and chose it because I had the ingredients on hand. Who knew it would be so yummy!
1 C brown sugar
1/4 C butter (original recipe called for 1/2, but I thought it turned out great with less)
1 C sour cream
3 t vanilla
In small pan melt butter and sugar together till all the sugar is moist. In medium bowl mix together sour cream, sugar mixture, and vanilla. Can serve warm or chilled.
I served it with various berries, but it would also be great on apples and pears, or anything, really.

Baked Artichoke Dip
I dunno which magazine this came from, but they apparently adapted it from The Cooking Club Cookbook anyway. It's fairly low-fat, and really yummy. We usually halve it, but that's just because there's not very many of us. But it re-heats really well.
2 14 oz cans artichoke hearts, drained and chopped
2/3 c grated Parmesan cheese
3/4 c fat free or "lite" mayonnaise
1 T fresh lemon juice
1 t garlic salt
1/2 t ground black pepper
Pita bread or crackers for serving
In a large bowl, combine the chopped artichoke hearts, Parmesan cheese, mayo, lemon juice, garlic salt, and pepper. Spoon the mixture into a baking dish suitable for serving.
Bake at 375 degrees for about 20 minutes or until the top is golden brown. Serve warm with bread or crackers.
Makes 8 servings.
