Hello Everyone, this is Laura's husband Kyle. For those of you who don't know, I love to cook. In fact, cooking is my favorite non-outdoor recreational hobby. Anyway, every now and then I start playing around with stuff and actually create something that surprises me. You know, the kinda stuff where I thought it would be good, but was actually REALLY good. Today was one of those days.
I thought that I had a fireside to go to tonight so Laura and I decided that we would do something in the slow-cooker so it would be ready right after church (the fireside ended up being postponed, hence why I'm blogging tonight instead). Given that we are overdue for a grocery run we were a little light in terms of supplies, so we settled for slow-cooked chicken. Typically when we do slow-cooked chicken we either cook it in cream of chicken soup or BB-Q sauce, but neither of us were really in the mood for one of those. We ended up deciding to make the chicken sort of like the cream of chicken way, but to make it a bit southwesty and serve it over southwest style rice instead of regular rice (I'll include the rice below).
So, with that all said here is the chicken recipe that surprised us so much:
Put 3-4 chicken breasts in slow cooker
Sauce:
2 T. Flour
2 T. Butter
1 can of cream of chicken soup
1/2 can Sprite
1 T. Green Tabasco
3. T. Salsa
1 T. Lime Juice
Mix flour and butter in saucepan until well blended an bubbly. Add remaining ingredients. Stir well, bring to simmer. Pour over chicken
1 - 2 tsp. of Lemon Pepper
Sprinkle Lemon Pepper over chicken.
Slow cook 4 hours on low.
Fork shred chicken.
Add 1/2 cup of sour cream (optional)
Slow cook 20 minutes.
As I said we were both very surprised by how good this ended up being. It went perfectly well with the rice, but it seems as though it has potential to be used in other ways. Some examples we thought of were: on nachos, in some quesadillas, or for some chicken enchiladas. If we'd had avocado we would've put some guacamole on top. If any of you give this chicken a try and come up with another way of serving it please share it here.
For those of you who want to try it with the rice, here is our rice recipe:
1 Cup long-grain rice
1 T. veg. oil
1 1/2 T. Lemon Juice
almost 2 cups of chicken broth
2 tsp. fresh chopped cilantro
Poor Lemon juice into 2 Cup cup measure. Add enough Lemon Juice to total 2 cups liquid.
Heat oil, stir rice in oil until well covered, about 1 minute. Mix in cilantro.
Add liquid to rice and cook normally.
