Banana Bread

Eddie and I used this recipe to make banana bread for our new neighbors - of course we sampled some before we delivered it and it turned out really good. So, here you go:

Banana Bread

8 Tbsp butter at room temp.
3/4 C. sugar
2 eggs
1 C. flour (all purpose)
1 tsp. baking soda
1/2 tsp salt
1 C. whole wheat flour
3 large ripe bananas, mashed
1 tsp vanilla
1/2 C. shelled walnuts, coarsely chopped

1. preheat oven 350, grease 9x5x3" bread pan
2. cream butter & sugar till light and fluffy. Add eggs one at a time, beating well after each one.
3. sift all purpose flour, baking soda & salt together, stir in whole wheat flour & add to creamed mixture, mixing well.
4. fold in bananas, vanilla & walnuts.
5. pour mixture into pan, bake 50 to 60 min. or till cake tester comes out clean - cool in pan 10 min., then on rack.

makes one loaf
