Apple Pie

The apple pie recipe is from allrecipes called Apple Pie by Grandma Ople with a few modifications and the crust recipe is my father-in-law's.

INGREDIENTS

  • 1 recipe pastry for a 9 inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • nearly 1/4 cup water
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbs vanilla (and also took 1 tbs of water out of the 1/4 cup
  • 8 Granny Smith apples - peeled, cored and sliced

DIRECTIONS

  1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, cinnamon, nutmeg, and vanilla and bring to a boil. Reduce temperature and let simmer.
  2. Mix 3/4 of the syrup with the apples reserving the last 1/4 for later. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the remaining sugar and butter syrup over the crust. Pour slowly so that it does not run off.
  3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
Double Pie Crust

2 cups flour
1 teaspoon salt
2/3 cup Crisco
5-7 Tablespoons ice cold water

Directions:
  1. Combine flour and salt.
  2. Cut in shortening with pastry knife until mixture is the size of small peas.
  3. Pour ice cold water in all at once and blend with fork. Add enough water until dough holds together but don't overwork it.
  4. Divide dough in half and cover in plastic wrap. For easier rolling chill for 15-30 minutes.
  5. Place dough on floured surface and roll out to a circle 1" larger than pie plate.
For baked crust: Prick sides and bottom of crust with fork and bake at 450 degrees for 10-12 minutes.
