Simple Garlic and Basil Pesto

I have so much fresh basil this summer that I decided that I would use it to make pesto last week. I found this recipe on allrecipes.com and it turned out fabulous! Just thought I'd share.


Simple Garlic and Basil Pesto

Ingredients:

3 cups chopped fresh basil
1 cup extra virgin olive oil
1/2 cup pine nuts
1/8 cup Brazil nuts
2/3 cup grated Parmesan cheese
2 tablespoons minced garlic
1/2 teaspoon chili powder

Directions:

Place the basil in a blender. Pour in about 1 tablespoon of the oil, and blend basil into a paste. Gradually add pine nuts, Brazil nuts, Parmesan cheese, garlic, chili powder, and remaining oil. Continue to blend until smooth.

Wow, the blog is looking great. (I usually read it in rss so I'm missing a lot of changes.) Pesto is great, and you can also freeze your pesto or basil if you end up with a surplus.

I am going to plant more basil next year. I have 3 plants but 2 are pretty small, while the other is doing awesome. I didn't quite have enough for a full blown pesto, but I made a pretty good sauce with it yesterday. Guess I should post it!
