Cinco de Mango Chicken Quesadillas

2 small boneless, skinless chicken breasts
8 oz can tomato sauce

1 dried ancho or pasilla chili pepper, stemmed and seeded

salt to taste

4 burrito style flour tortillas (10 inch)

6 oz thinly sliced Jack cheese

1 ripe mango, thinly sliced

1/4 cup minced red bell pepper

1/4 cup sliced green onions

Mango salsa (below)

Puree tomato sauce and pepper in blender. Transfer to saucepan and simmer over medium heat for 15 minutes. Add grilled chicken and toss well to coat; season with salt. Place flour tortillas on flat surface. Top each with equal amounts of cheese, mango, bell pepper, green onion, and chicken; fold over tortillas. Cook in large skillet on both sides until cheese is melted and tortilla is crisp - about 5 minutes each side. Serve with mango salsa.

Mango Salsa

1 lg chopped mango
1/3 c chopped red bell pepper
1/4 c minced red onion
1/2 T chopped fresh cilantro
1/2 T lime juice

1/8 t salt

(I also sometimes add 1 T of vinegar)
