Mint Chocolate Brownies

This one's for you Shay!

Brownies:
Melt together 2/3 cup butter with 3 squares baking chocolate (or if you don't have baking squares you can substitute them with 9 tablespoons cocoa and 3 tablespoons oil)

Combine:
  • 2 cups sugar
  • 4 eggs
  • 1 tablespoon mint extract
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Add chocolate mixture to above mixture and mix well. Pour in a greased 9x13" pan and bake 325 degrees for 25-30 minutes.

Cool brownies then make icing and spread on top.

Icing:
  • 6 tablespoons butter (softened)
  • 4 tablespoons evaporated milk
  • 1/2 teaspoon mint extract
  • green food coloring
  • 2 cups powdered sugar

Put frosted brownies in refrigerator 30 minutes, then melt:
  • 3 tablespoons butter
  • 6 oz. chocolate chips

Carefully spread ontop of icing before chocolate sets.

*For an easier version, use a brownie mix for the brownie part and just add the mint, then make the frosting and chocolate.

Yea!! Thanks Laura! I've been wanting to ask you for that recipe for a long time, but kept forgetting. Mike LOVES minty stuff, so I'll have to make these for him when he comes home for his midtour leave. I remember they were soooo yummy!
