Andrea's Fruit Trifle

This is my all-time favorite dessert to make - especially in the summertime. It is light, you can make it as low fat and low sugar as you want, it's really easy to make, it can feed quite a bit of people, and most people find it extremely yummy!

Fruit Trifle

1 Angel Food Cake
2 boxes of instant pudding - prepared according to box directions (I usually make it with vanilla but you could also use banana cream, coconut cream, white chocolate, etc. - it all depends on what fruits you put in it)
1 big tub of cool whip (you can use the low fat kind if you want)
4 or more different fruits of your choice (fresh fruit is best)

Start out by cutting the cake into cubes about the size of icecubes - sometimes the cake is hard to cut so I just rip it up with my hands. In a glass trifle bowl (or any glass bowl) make the following layers: cake, pudding, fruit, cool whip (I can usually do this layer combination twice ending up with cool whip on top). And that's it!

A couple of fun hints: I like to use different fruits in different layers and sometimes two different kinds of puddings for the two different pudding layers. (for example: On Sunday I made this with bananas and peaches on the first fruit layer and kiwis and strawberries on the second fruit layer and used vanilla pudding for both pudding layers)

some fruits I've tried: strawberries, raspberries, blueberries, blackberries, bananas, pineapple, mandarin oranges, kiwis, peaches, coconut (not really a fruit, I know), mangos

The best part about this is that you can make it however you want and with whatever fruit your family likes best (although I would steer clear of melons or really watery fruits - they'll just sog everything up).

Also, if you're a chocolate lover, you can do it with chocolate cake, chocolate pudding and berries - I've never tried it but it sounds really good.

you could feed at least 8 people with really generous portions or closer to 12 people with smaller portions - it feeds quite a few people (one of the reasons I love it so much!)
