Weeknight Favorites: Smoky Chicken Quesadillas

2 C cooked chicken
2-4 T bbq sauce

Tortillas

Cheddar cheese

sour cream


In a bowl mix the chicken and bbq sauce until evenly coated. In a large fry pan make a quesadilla by topping a tortilla with cheese and then top with chicken and then another tortilla. Pan fry on both sides until tortilla is crispy and cheese is melted. Cut and serve with sour cream and home made salsa.

Home made Salsa

4-5 roma tomatoes
1 med. onion

1 handful fresh cilantro

1 jalapeno

Salt and Pepper


Finely dice tomatoes and onion, add chopped cilantro and minced jalapeno. Add S&P to taste. Can be made the night before.
