Asparagus Crepes

As the mom of some very picky eaters I'm always trying to find ways to sneak veggies in here and there. I'd been craving asparagus and came up with this creation. I thought it turned out pretty well!

Oh yeah, and I can't remember the measurements exactly, so this is my best guess!

1 bunch Asparagus, cleaned and chopped into 1" pieces
1/2 medium onion, chopped
1 T olive oil
1 can cream of mushroom soup
1/2 cup milk
1/2 teaspoon garlic powder
salt
pepper
1/2 cup cooked chicken, chopped (optional)
1/2 cup Parmesan cheese, grated

1 recipe for crepes (just use the crepe part)

Saute asparagus and onion in olive oil on medium until crisp tender (about 4 minutes). Add mushroom soup and milk, garlic powder, salt and pepper and cooked chicken. Bring to simmer and cook until heated through (about 2-3 minutes). Remove from heat and stir in 1/4 cup Parmesan cheese. Fill crepes with filling and sprinkle with remaining cheese. Serve immediately.

You could also serve this over pasta...I think egg noodles would be yummy!
