Stuffed Peppers

I don't have a picture but this is my mom's recipe and it's definitely a keeper! It also makes your house smell divine.

1 lb. ground beef or turkey
1 egg
1 C cooked rice
1/2 C salsa
dash salt
dash pepper
1 small onion, finely chopped

2 or 3 large green bell peppers or 4 small peppers - hollowed out and seeds removed.

1. boil peppers in a pot of water just enough to soften them, about a minute or two each.
2. combine first 7 ingredients.
3. stuff meat mixture in peppers
4. stand peppers in shallow pan and add 1 inch of water in the bottom. Cover with foil.
5. bake for 30 to 45 min. in a 350 degree oven.
6. remove foil for remaining 15 minutes of baking.
