3 cups grated cheeses (parmesan and mozzarella or swiss or cheddar and monterey jack - whatever you're in the mood for!)
1 T cornstarch
1 cup milk
1 cup chicken broth
8 oz. cream cheese, cubed
Directions:
- Toss cheeses and cornstarch together.
- Combine milk and chicken broth in a saucepan over medium heat until warm.
- Add cream cheese and whisk until smooth, about 5 minutes. (You might have to turn the heat up a little and whisk it really fast to get it "smooth.")
- Bring to a simmer and add cheese/cornstarch mixture a handful at a time. Cook 5 more minutes.
- Serve immediately with chicken, sausage, bread, peppers, carrots, red potatoes, mushrooms, zucchini, etc.
